Farm-to-market fruit chews 

Dried fruit, delicious juices and incredible jams. Many South Tyrolean producers independently transform part of their harvest into products that they sell directly from their farms. Fruit chews aren’t often found in farm shops, but this could soon change. 

Our Kitchen Lab has recently conducted a study on handmade fruit-flavoured sweets made with local ingredients. The aim was to create a simple, high-quality recipe that would particularly appeal to farmers and retailers. 

But why locally sourced, fruit-flavoured sweets? Because the confectionery market is booming and confectioners are increasingly using natural ingredients.

Hand-crafted chews stand out thanks to their use of local ingredients, such as fruit, herbs and vegetables. As part of the ERDF IMPACT project, this case study provides companies looking to expand their product range with a detailed guide, from farm shops to manufacturers of homemade cordials.

In our test kitchen, we conducted thorough testing of every ingredient and every stage of the process, from choosing the gelling agent to determining the optimal packaging time. The resulting manual illustrates the entire process, from initial idea to finished product.
