R&D Internship – Development of Plant-Based Fermented Products
NSPulse Benefit Corporation is looking for an intern to join its R&D and Patents team and contribute to a research and development project focused on fermented products based on legumes and pseudocereals.
Main activities
The internship will focus on the design and execution of experimental fermentation trials using plant-based food matrices.
Main activities will include:
preparation and processing of raw materials;
formulation of products based on legumes and pseudocereals;
application of selected microbial cultures;
monitoring of key fermentation parameters;
collection, organization and interpretation of experimental data;
evaluation of the technological properties of the developed products;
sensory characterization, with particular attention to aroma, taste, texture and overall acceptability;
comparison of different formulations and identification of the most promising combinations for further development.
Learning objectives
The internship will provide practical experience in the design and execution of experimental trials involving fermented foods, with a particular focus on raw material preparation, microbial culture application and monitoring of key process parameters.
The selected candidate will also develop skills in experimental data collection and interpretation, sensory and technological evaluation of food products, and the application of good laboratory practices.
Particular attention will be given to developing independent working skills, critical thinking and the ability to communicate and discuss experimental results.
Requirements
Education: Master’s degree or equivalent, preferably in Food Science, Agricultural Sciences, Biology, Biotechnology or related disciplines.
IT skills: Microsoft Excel.
Languages:
Italian: B2–C1;
English: B2–C1.
An interest in food science, food microbiology, fermentation, product development and plant-based foods is highly valued, together with scientific curiosity and a hands-on experimental mindset.
