Served with rice or noodles, alongside fish, meat or tofu, added to broths for extra flavour, or enjoyed on its own: kimchi is one of the great classics of Korean cuisine. For Erin Eun-Young Kim, this spicy, fermented vegetable dish from her home country is the perfect accompaniment to every meal. Inspired by the fresh ingredients of Italian cuisine, she and her partner Mark Blackwell have started making their own kimchi.
With Kimchi Pop, the couple are bringing their kimchi to Italian delis and speciality food stores and hope to soon present European fans of Korean food with their authentic product made using quality ingredients. Before making it available to customers, however, they brought their kimchi to our Kitchen Lab, where it passed through another key stage with the creation of a marketable sample batch.
