From Waste to Value: Valorising By-Products of the Food Production


Excellent fruit and vegetables, baked goods, dairy and meat products, beverages and more: South Tyrolean food and raw materials are well-known and much appreciated both locally and abroad for their outstanding quality. However, production and processing generate waste, leftovers and by-products that are (or have to be) disposed of – posing an ecological and economic problem.

“From Waste to Value” brings together international and regional experts, researchers and companies to explore how supposed waste can be turned into usable resources, resulting in the creation of new value chains. Traditional approaches and innovative trends are among the main topics of the conference, together with solutions and application scenarios that have already been developed, and the legal framework conditions. The focus will be on the economic potential and environmental benefits of circular food production.
