Non-invasive and non-destructive testing of molecules and proteins: NMR spectroscopy.

The NMR Spectroscopy Laboratory deals with the qualitative and quantitative characterisation of small molecules and proteins in food and plant organs using high-resolution nuclear magnetic resonance (NMR). Non-invasive and non-destructive NMR spectroscopy makes it possible to obtain the 'fingerprint' of a molecule and study its structure and molecular dynamics. This technique is used to investigate the authenticity, typicity and origin of local agricultural and food products, as well as to elucidate the chemical structure and function of unknown biological molecules.
