The Micro4Foods Project will develop a microbial proteomics and nutrition platform to facilitate innovation, sustainability, process authentication and product authentication, especially in South Tyrol. Following the biotechnology supply chain concept, it will therefore be possible to guide the transformation process for any item of food, to renew processes and products, to improve environmental sustainability, to recover waste and by-products, to enhance the functional properties with respect to the nutrition-human-axis, and to make possible the provision of markers and techniques for authenticating typical products. The platform will have a distinctive capability for interacting with industry sectors and interest groups.
