Using MALDI-TOF (Matrix-Assisted Laser Desorption Ionisation, Time Of Flight) mass spectrometry, the laboratory characterises the microbial state of food products. With consolidated experience in wines, beers and other beverages obtained from fermentation processes, it now also investigates fruit, meat and dairy products.
